Matzah Lasagna

Looking for a quick and easy crowd pleasing meal during Passover? This is it! And the leftovers are great.

Ingredients:

3 pieces of matzah 4 cups of tomato sauce 1 large onion, minced

3 cloves garlic, minced

2 tbsp olive oil 1 lb. cottage cheese 2 eggs Salt Pepper

4 cups of baby spinach, chopped kale 2 cups Mozzarella cheese

DIrections

Sauté onion and garlic in oil

When transparent, add tomato sauce and simmer a few minutes.

Mix cottage cheese, eggs, salt, and pepper.

Hold matzo under hot running water. Break into thirds to resemble long lasagna noodles.

Spoon some sauce into bottom of square glass baking dish.

Layer “noodles,” cottage cheese mixture and sauce.

Then add a layer of spinach or kale.

Top with mozzarella cheese.

Bake at 350 ̊ for half hour or until bubbly.
