Ginger Sesame

Roast Chicken

 

Ingredients

  • 3-4 lb. Kosher Chicken

  • 2 Tbsp Olive Oil

  • 1 Tsp Sesame Oil

  • 1 Tbsp Grated Fresh Ginger

  • 12 Slices of Ginger

  • 5 Garlic Cloves, 1 minced

  • Salt and Pepper

  • 1 Quartered Onion

  • 1 Quartered Lime

  • 1 Thinly Sliced jalapeno

Directions

  1. Preheat oven to 425

  2. Rinse chicken, remove anything inside, pat dry

  3. Combine olive oil, sesame oil, grated ginger and minced garlic

  4. Spread half of mixture under skin of chicken, other half on top of skin of chicken

  5. Salt and pepper well, including cavity

  6. Stuff chicken with remaining ginger, garlic, onion, half of lime and jalapeno

  7. Roast breast up on cooling rack set into cookie sheet for 30 minutes, flip for 20 minutes, add ½ cup water to bottom of tray, flip to breast up again for another 20 minutes

  8. Let rest for 10 minutes

  9. Slice and squeeze juice of the other half of the lime over the chicken

Baked Sweet Potato Latkes

 

 

Ingredients

  • 2 C. Grated Sweet Potato

  • ½ C. Grated Onion

  • ¼ C. Flour

  • 1 Egg

  • 1 Tsp. Smoked Paprika

  • 1 Tsp. Grated Fresh Ginger

  • ½ Tsp. Ginger Powder

  • 1 Tsp. Salt

  • ½ Tsp. Pepper

  • ¼ Tsp. Baking Powder

Directions

  1. Preheat oven to 400

  2. Grate Sweet Potatoes (easiest to use grating disk on food processor)

  3. Grate Onion (using grating disk on food processor, then drain in fine mesh strainer, pushing liquid through with a spatula)

  4. Combine all ingredients

  5. Form ¼ cup patties, place on greased cookie sheet, push down patties with a fork

  6. Bake for 25 minutes, flip and bake for 15 minutes

Sauteed Bok Choy

 

 

Ingredients

  • 3 Small Heads of Bok Choy

  • 1 Thinly Sliced Onion

  • 2 Tbsp Olive Oil

  • 1 Tsp. Sesame Oil

  • 1 Tbsp Soy Sauce

  • Salt and Pepper

  • Chili Flakes (optional)

 

Directions

  1. Quarter bok choy, remove core, rinse thoroughly

  2. Slice into 1 inch pieces

  3. Heat olive oil over medium heat in large frying pan

  4. Add onion, cook until soft

  5. Add bok choy in batches, it will shrink, until it’s all in the pan and softened

  6. Add sesame oil, soy sauce and ½ tsp. chili flakes if desired
