Matzah Lasagna
Looking for a quick and easy crowd pleasing meal during Passover? This is it! And the leftovers are great. Ingredients: 3 pieces of matzah
4 cups of tomato sauce
1 large onion, minced 3 cloves garlic, minced 2 tbsp olive oil
1 lb. cottage cheese
2 eggs
Salt
Pepper 4 cups of baby spinach, chopped kale
2 cups Mozzarella cheese DIrections Sauté onion and garlic in oil When transparent, add tomato sauce and simmer a few minutes. Mix cottage cheese, eggs, salt, and pepper.
