Matzah Granola
My friend Rabbi Emily Mathis shared her recipe with me last year, and ever since I have been LOVING it! Here's how we make this delicious breakfast treat at my house:
Ingredients
3 cups matzo farfel (whole wheat is good, to help counteract the rest of the recipe)
1 cup walnuts
1 cup salted pumpkin seeds
1 cup sliced almonds
½ cup shredded coconut
¼ cup olive oil
1/2 cup honey
4 tsp ground cinnamon
1 cup mixed raising
1 cup dried cranberries
Directions
Preheat oven to 325 degrees
Line a baking sheet with parchment paper; set aside
In a large bowl, mix together matzah farfel, nuts/seeds, and coconut
Stir together the oil, honey and cinnamon
Combine to coat everything
Spread the matzah mixture evenly on the prepared baking sheet
Transfer to oven and bake until toasty and a little golden, about 15 minutes, stirring halfway through Remove from oven
Stir in dried fruit
Transfer granola to an airtight container
